On Herdade dos Lagos you may find a variety of autothonous and Spanish olive trees on the 80 hectares olive orchard.

The olives are harvested manually and collected with large nets. The poor soils result in low yield of excellent quality. Since 2012 the olive plantation is converted to the Organic farming.

After the olives have been cold-pressed they are turned into the highest quality olive oil, the extra virgin olive oil. For fruit pressing we use the highest quality press. The stones are removed before the pressing process by state-of-the-art technology as they are responsible for the bitter taste of olive oils.

Following the fruits are worked gently at low temperatures exclusively by mechanical proceedings. All of the process steps are under regular quality controls.
